
Thai Curry Course
Five pastes (green, red, yellow, massaman, panang) cover most of the Thai curry world. Pound each one once, keep it in the fridge for a few weeks, and you can plate a finished curry in ten minutes by combining the paste with coconut milk and whatever protein's in the fridge. Different system from BIR, same comforting principle: prep once, cook fast.
Overview
Thai curry runs on pastes the way BIR curry runs on base gravy. A curry paste is a pounded blend of fresh aromatics (lemongrass, galangal, kaffir lime, garlic, shallot) plus dried spices (coriander, cumin, white pepper) plus chillies (fresh for green; dried for red, yellow, massaman). Each paste has its own signature; together they cover almost every named Thai curry on a restaurant menu.
The cooking is fast once the paste is ready. The classical sequence:
- Crack the coconut milk (separate the cream from the thinner liquid).
- Fry the paste in the cream until aromatic and the oil splits out.
- Add protein, then thin coconut milk to make a sauce.
- Add vegetables, palm sugar, fish sauce, fresh herbs.
- Plate over rice.
Total cook time: 10-15 minutes once the paste is made and the ingredients are prepped.

The Five Pastes
- Green Curry Paste: fresh green chillies, the most popular Thai curry. Bright, fierce, herbaceous.

The Paste-Versus-Jar Question
Shop-bought Thai curry pastes vary wildly. The best (Mae Ploy, Maesri, Aroy-D from Asian grocers) are 80% as good as home-made for 10% of the effort. The worst (supermarket-brand jars at twice the price) are watery, salt-heavy and bear little resemblance to the real thing.
For weeknight cooking: buy a decent Asian-grocer paste (£3-5 a tub, lasts 3 months refrigerated). Use 2-3 tablespoons per curry.
For the real flavour: make your own. The labour is in the pounding (45-60 minutes the first time, faster after). The result is dramatically more aromatic.

Why Pastes, Not Powders
Thai cuisine doesn't use ground spice powders for curries. The fresh aromatics (lemongrass, galangal, kaffir lime, coriander roots) cannot be dried without losing their character. Only a paste captures them properly.
Indian curries can be built from dry-ground spice mixes (see the BIR curry course) because the spices are mostly seeds (cumin, coriander, fenugreek) that hold their flavour dried. Thai curries need the fresh aromatic kick that only a paste provides.

Chicken Curry
A curry-house style chicken curry that builds flavor from whole spices and fresh aromatics rather than premade base sauces. The method takes a little more time, but rewards you with a rich, home-style curry sauce and tender chicken. Add extra chilli or more garam masala to increase heat for your preference.
Pad Pak Ruam
A wok is heated hot; garlic flashes briefly in oil; vegetables go in by cook time, firmest first (broccoli, carrot, baby corn), then softer (mushroom, snow peas), and the leafy ones at the end (water spinach, bok choy). A small amount of vegetable stock and soy steams them through; oyster sauce (vegetarian) and sugar balance. Sesame oil to finish.
Massaman Curry Paste
Spice-heavy paste for massaman curries, with Muslim roots. More spices than other curries; requires pounding for smooth texture.
Panang Curry Paste
Milder, sweeter than red curry paste, with roasted peanuts. Key ingredient for Panang curries; adjust spice and sweetness as desired.

Bombay Potatoes
Bombay Potatoes is comfort food at its finest. Small potatoes are partially cooked, then coated in a richly spiced oil infused with seeds and aromatics. Some potatoes are mashed to create a creamy base, while others remain whole for texture. The result is a warm, golden, deeply spiced side dish that's utterly satisfying. This is a vegetarian staple of Indian home cooking.
Cabbage Foogath
A foogath is the Goan version of a coconut-stir-fry vegetable: a temper of mustard seeds, dried red chilli, urad dal and curry leaves in coconut oil, sliced onion and garlic cooked briefly, then the vegetable tossed in over high heat. Fresh grated coconut is folded through at the end. The cabbage keeps a slight crunch and gets a nutty-sweet finish.
Cabbage Thoran
Cabbage is finely shredded into ribbons. A temper of mustard seeds, urad dal, dried red chilli and curry leaves is bloomed in coconut oil, the shredded cabbage tossed in over high heat, and a coconut paste of fresh coconut, green chilli, garlic and cumin folded through. The dish stays dry and the cabbage retains a slight crunch.
Chakalaka
Onion is softened in oil; garlic, ginger and curry powder bloom. Carrots cook briefly to tender-crisp. Peppers (red and green) and chillies join. Tomatoes simmer everything down. Tinned baked beans go in last with a splash of vinegar to balance. Eaten warm or at room temperature; tastes better the next day.
