
Goan Fish Curry
Peixe caril: the daily Goan fish curry. Pomfret or mackerel poached in a coconut and tamarind gravy bright with Kashmiri chilli and curry leaves. The rice-and-curry lunch of every Goan home.
Overview
A Goan coconut masala paste is ground from soaked Kashmiri chillies, coriander seeds, cumin, peppercorns, garlic and ginger with fresh coconut and tamarind. Onion is softened in coconut oil with green chilli and curry leaves, the masala is fried until the oil separates, water and salt are added for a brief simmer, and the fish is slid into the gravy for a gentle poach. The dish is sharply acidic, deeply red and just hot enough.
Ingredients
Fish
- 600 g firm white fish (pomfret, mackerel, kingfish, snapper or sea bream; cut into steaks or 4 cm chunks)
- ½ teaspoon turmeric
- 1 teaspoon salt
- ½ lime (juice)
Masala paste
- 12 dried Kashmiri chillies
- 3 dried byadgi chillies (or 1 hotter chilli)
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon black peppercorns
- 80 g fresh grated coconut (or 60 g desiccated, rehydrated)
- 6 garlic cloves
- 25 g fresh ginger
- 1 tablespoon tamarind paste (or 1 walnut-sized lump in 80 ml hot water, strained)
Curry
- 3 tablespoons coconut oil
- 1 onion (finely sliced)
- 2 green chillies (slit)
- 15 fresh curry leaves
- 500 ml water (or thin coconut milk for a richer curry)
- 1 teaspoon salt (to taste)
To finish
- 5 small pieces of dried kokum (optional, traditional) (or 1 teaspoon palm vinegar)
- A handful of coriander (chopped)
Method
Stage 1 - Marinate the fish
- Rub the fish with the turmeric, salt and lime juice.
- Set aside while building the masala.
Stage 2 - Soak and grind the masala
- Soak the dried chillies in hot water for 15 minutes to soften.
- Drain.
- Toast the coriander, cumin and peppercorns in a dry pan for 30 seconds.
- Grind the soaked chillies, toasted spices, coconut, garlic, ginger and tamarind paste to a smooth red paste with 80 ml of water.
Stage 3 - Build the base
- Heat the coconut oil in a wide pan over medium heat.
- Add the sliced onion, green chilli and curry leaves.
- Cook for 6-8 minutes until the onion is soft and golden.
Stage 4 - The masala
- Add the ground paste.
- Cook for 6-8 minutes, stirring, until the oil starts to separate from the masala at the edges (skipping this gives a raw-tasting curry).
Stage 5 - The gravy
- Pour in the water and salt.
- Add the kokum (if using).
- Bring to a gentle simmer.
- Cook uncovered for 5 minutes for the flavours to combine.
Stage 6 - Poach the fish
- Slide the fish into the gravy in a single layer.
- Cover and simmer over very low heat for 6-8 minutes, until the fish is just cooked through (don't stir; tilt the pan to baste).
- Taste and adjust salt.
Stage 7 - Rest and serve
- Rest off the heat for 10 minutes.
- Scatter the coriander.
- Serve with steamed rice (the only correct pairing).
Notes
- Kokum or vinegar: Kokum (dried mangosteen) gives the curry its distinct Goan sour-fruit note. Tamarind is the everyday substitute; cider vinegar is a third choice.
- Don't stir the fish: Tilt the pan instead. Stirring breaks the pieces and clouds the gravy.
- The right red: Kashmiri chillies give the curry its colour without making it inedibly hot. Byadgi adds heat in measured doses. Always soak the dried chillies first; raw-grinding gives a gritty paste.
Storage
- Refrigerate up to 2 days; the fish softens slightly.
- Doesn't freeze well (the coconut milk separates).

Kerala Fish Curry
A masala paste of shallot, ginger, garlic and red chilli is bloomed in coconut oil with mustard seeds, fenugreek and curry leaves. Coconut milk is poured in and the curry brought to a simmer, then tamarind water and a tomato are added. The fish goes in last and poaches in the gravy for just long enough to set; over-stirring breaks the pieces.
Malaysian Curry Laksa (Laksa Lemak)
A two-part dish: a deeply concentrated prawn-and-chicken stock built from roasted prawn shells, layered with a freshly pounded laksa paste of dried chilli, galangal, lemongrass and candlenuts. The two are joined with coconut cream to create a glossy, fragrant broth that bathes rice vermicelli, tofu puffs and prawns. Finished at the table with sambal, lime, fresh coriander and bean sprouts.
Andhra Chicken Curry
Chicken thighs are marinated briefly with turmeric, ginger-garlic paste, yogurt and a pinch of red chilli. A dry-roast of poppy seeds, sesame seeds, coconut, fennel, coriander and dried red chillies is ground with a splash of water into a coarse paste. The base is built with shallots, curry leaves and tomato; the chicken is browned in stages; and the masala paste is folded in for the long, gentle simmer. Tamarind and a curry-leaf temper finish.
Sri Lankan Chicken Curry
Whole spices dry-toast until smoky, then grind to a Sri Lankan curry powder (coriander, cumin, fennel, cardamom, cinnamon, cloves, fenugreek). Onion melts in coconut oil with curry leaves, pandan and lemongrass. Chicken pieces sear briefly; the spice mix blooms; thin coconut milk simmers everything until tender; thick coconut milk finishes the sauce. Lime at the table.
