
Mujadara
Lebanon's poor-man's-feast: brown lentils and rice cooked together with deeply caramelised onion folded through, crisp fried onions piled on top.
Overview
Lentils (brown or green, not red) simmer for 25 minutes until tender. Two batches of sliced onion fry in olive oil, the first batch goes very dark mahogany (almost burnt at edges) for the flavour base; the second batch is fried separately and reserved as a crispy topping. Rinsed basmati rice cooks absorption-style with the lentils, the first batch of onion, cumin, allspice and stock for 20 minutes. The crispy onion scatters on top at the table.
Ingredients
- 250 g brown lentils (or green lentils, rinsed)
- 1 litre water (for cooking lentils)
- 100 ml olive oil
- 3 onions (large, sliced thin)
- 300 g basmati rice (rinsed; soaked 15 minutes; drained)
- 1 ½ teaspoons ground cumin
- 1 teaspoon ground allspice
- 1 teaspoon ground black pepper
- 1 ½ teaspoons salt (to taste)
- 700 ml lentil cooking water (from above; top up with hot water if short)
To serve
- 200 g Greek yogurt
- 1 cucumber (small, diced)
- 1 tablespoon dried mint
- A pinch of salt
Method
Stage 1 - Lentils
- Place lentils in a pot with the 1 litre of water.
- Bring to a boil; reduce to a simmer; cover partially.
- Cook 20-25 minutes until just tender but still holding shape.
- Drain, reserving 700 ml of the cooking liquid. Set lentils aside.
Stage 2 - First onion (deep brown, for the body)
- Heat 70 ml of olive oil in a wide heavy pot over medium heat.
- Add 2 of the 3 onions (sliced).
- Cook 25-30 minutes, stirring often, until deeply mahogany brown - past golden, almost into burnt at the edges. This dark caramelisation is the dish's character.
Stage 3 - Spices and rice
- Add cumin, allspice, pepper to the brown onion; toast 30 seconds.
- Add the drained lentils; stir.
- Add the rinsed rice; toast 1 minute.
Stage 4 - Cook
- Pour in 700 ml of reserved lentil water (top up with hot water if you have less); add salt.
- Bring to a boil; stir once; reduce to lowest heat.
- Cover tightly; cook 18-20 minutes.
Stage 5 - Rest
- Remove from heat (lid on); rest 10 minutes.
- Fluff gently with a fork.
Stage 6 - Second onion (crispy, for the top)
- Heat the remaining 30 ml of olive oil in a frying pan over medium-high.
- Add the third onion (sliced).
- Fry 10-12 minutes, stirring often, until crispy and very dark brown at the edges.
- Lift onto kitchen paper.
Stage 7 - Yogurt-cucumber salad
- Combine yogurt, cucumber, dried mint and a pinch of salt.
Stage 8 - Plate
- Tip mujadara onto a wide warm platter (or invert from a domed bowl for the traditional shape).
- Scatter the crispy onion over the top.
- Serve with the cucumber-yogurt salad on the side.
Notes
- Two onion stages: The first batch goes deep into the rice for sweetness; the second batch crisps on top for texture. Both matter.
- Brown lentils, not red: Red lentils dissolve. Mujadara needs lentils that hold their shape - brown, green or French lentils.
- Patience with the onion: Pale onion gives bland mujadara. Push to deep mahogany; let some bits scorch slightly.
Storage
- Refrigerate 4 days; reheats well.
- The crispy onion topping should be made fresh.

Mujadara
Brown lentils boil until almost tender; long-grain rice and water join them along with cumin and a touch of cinnamon. While they finish cooking, sliced onions fry slow in olive oil until they're deep brown and crisp. The crisp onions and their dark oil go on top.
Lahori Tarka Dal
Split yellow moong dal (or chana dal, or a mix) is rinsed and pressure-cooked or simmered with turmeric until completely soft. The dal is mashed lightly to a porridge consistency. A second pan fries ghee with whole cumin, garlic, sliced green chilli, dried red chilli and curry leaves until the garlic just turns golden. The hot tarka is poured over the dal with a dramatic sizzle; coriander and lemon finish.
Riz a Djej
A whole chicken poaches with onion, cinnamon, cardamom and bay 45 minutes; chicken comes out, stock is strained. Mince (lamb or beef) browns hard with onion, baharat, cinnamon and allspice. Basmati rice toasts in ghee with the mince, then cooks absorption-style in the chicken stock for 18 minutes. Plated with the rice on the bottom, the mince mixed through, shredded poached chicken on top, and toasted pine nuts, almonds and raisins scattered over.
Warak Enab
Vine leaves blanch briefly to soften; veins are trimmed. A filling of short-grain rice, lamb mince, finely chopped tomato, parsley, mint, allspice, cinnamon, salt, pepper and olive oil mixes raw. Each leaf rolls around a teaspoon of filling into a 7 cm cylinder. Packed tight in a wide pot lined with sliced potato and lamb bones, weighted with a plate, cooked in a lemon-and-stock liquid for 75 minutes on the lowest heat. Inverted onto a platter at the end.
