Lebanon's Sunday lunch: poached chicken pulled off the bone, served over basmati cooked in the chicken stock with baharat, pine nuts and slivered almonds.
Overview
A whole chicken poaches with onion, cinnamon, cardamom and bay 45 minutes; chicken comes out, stock is strained. Mince (lamb or beef) browns hard with onion, baharat, cinnamon and allspice. Basmati rice toasts in ghee with the mince, then cooks absorption-style in the chicken stock for 18 minutes. Plated with the rice on the bottom, the mince mixed through, shredded poached chicken on top, and toasted pine nuts, almonds and raisins scattered over.
Ingredients
Chicken and stock
- 1 whole chicken (about 1.4 kg, or 6 bone-in thighs/drumsticks)
- 1 onion (large, halved)
- 1 cinnamon stick
- 6 cardamom pods (bruised)
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 ½ teaspoons salt
- 2 litres water
Mince and rice
- 300 g lamb (or beef mince)
- 1 onion (medium, chopped)
- 3 tablespoons ghee (or olive oil)
- 1 ½ tablespoons Baharat
- ½ teaspoon ground cinnamon
- ½ teaspoon ground allspice
- 400 g basmati rice (rinsed; soaked 20 minutes; drained)
- 800 ml chicken stock (from above)
- 1 teaspoon salt (to taste)
Nuts and fruit
- 40 g pine nuts
- 40 g flaked almonds
- 40 g raisins
- 2 tablespoons ghee (or oil, for toasting)
To finish
- 3 tablespoons fresh parsley (chopped)
- 1 lemon (cut into wedges)
- Plain Greek yogurt, on the side
Method
Stage 1 - Poach chicken
- Place chicken (or thighs) in a wide pot with onion, cinnamon stick, cardamom, bay, peppercorns, salt and water.
- Bring to a simmer; skim scum.
- Cover; simmer 45 minutes (whole chicken) or 35 minutes (thighs) until tender.
- Lift the chicken onto a plate; strain the stock; reserve 800 ml.
- When the chicken is cool enough, pull the meat off the bones in large pieces; discard skin and bones.
Stage 2 - Mince
- Heat 3 tablespoons ghee in a wide heavy pot over medium-high.
- Brown the mince hard 5 minutes, breaking up clumps.
- Add chopped onion; cook 8 minutes until soft.
- Stir in baharat, cinnamon and allspice; cook 1 minute.
Stage 3 - Rice
- Add the drained rice to the pot with the mince; toast 1 minute, stirring.
- Pour in 800 ml of reserved chicken stock; add salt; bring to a boil.
- Stir once; reduce to lowest heat; cover tightly; cook 18 minutes.
Stage 4 - Rest
- Remove from heat (lid on); rest 5 minutes.
- Fluff gently with a fork - the mince should be distributed through the rice.
Stage 5 - Nuts and fruit
- While the rice rests, heat 2 tablespoons ghee in a small pan.
- Add pine nuts, almonds and raisins; toast 3-4 minutes, stirring, until nuts are deep gold and raisins are plump. Watch - pine nuts burn fast.
Stage 6 - Plate
- Tip rice onto a wide warm platter.
- Arrange the pulled chicken on top.
- Scatter the nut-and-raisin mixture (with any ghee) over the chicken.
- Sprinkle parsley.
Stage 7 - Serve
- Lemon wedges and yogurt on the side.
- Eat from the shared platter.
Notes
- Whole chicken vs thighs: Whole gives a deeper stock and the dramatic platter; thighs are faster and still very good.
- Toast nuts at the end: Pine nuts go from gold to black in 30 seconds. Last-minute toasting keeps them right.
- Stock quantity: 800 ml for 400 g basmati is the right ratio. Top up with hot water if you fell short on stock.
Storage
- Refrigerate 4 days; reheat covered with a splash of stock.
- Freezes 3 months.

The Saudi gathering platter built for the night when one cut of meat isn't enough. Three proteins share the same pot: lamb shoulder and beef chunks go in first with a kabsa-spiced tomato base for ninety minutes of slow simmer until they're meltingly tender, then chicken pieces drop in for the last thirty-five minutes (their cook time is shorter, so they go in later). The strained meat broth, deeply spiced from everything that has braised in it, becomes the cooking liquid for basmati scented with saffron and dried lime. At the end you arrange all three meats on top of the rice in the same platter and bring the whole thing to the centre of the table. The kind of dish you make for a wedding lunch, an Eid gathering, or the night the extended family arrives unannounced.
Kofta Burger
Lebanese kofta, sometimes spelled kafta, is minced lamb (often with a little beef) seasoned with grated onion, parsley and the warm spice blend known variously as baharat, sabaa baharat or seven-spice: allspice, black pepper, cinnamon, cloves, nutmeg, cumin and coriander. Traditionally it is moulded around flat metal skewers and grilled over charcoal at a mangal, where it sears fast and stays juicy. Shaping the same mince into a patty for a flatbread sandwich is a natural extension and one you will find in Beirut bakeries and Levantine takeaways from Sydney to Detroit. What makes this burger taste authentic and not just a "Middle-Eastern-spiced lamb burger" is the grated onion: pulled across a box grater so it dissolves into the mince and seasons every gram from the inside, releasing moisture as it cooks. Squeezing out the excess liquid first keeps the patty from falling apart. The sauce is a loosened tahini-yoghurt, tart with lemon and garlic, and the contrast comes from sumac-dusted onions whose sharp, almost berry-like sourness cuts through the lamb's richness. Wrap it in toasted khobz or a soft brioche, depending on the occasion. Difficulty is low. The only skill is restraint with the mince: knead just enough to bind, no more.
Warak Enab
Vine leaves blanch briefly to soften; veins are trimmed. A filling of short-grain rice, lamb mince, finely chopped tomato, parsley, mint, allspice, cinnamon, salt, pepper and olive oil mixes raw. Each leaf rolls around a teaspoon of filling into a 7 cm cylinder. Packed tight in a wide pot lined with sliced potato and lamb bones, weighted with a plate, cooked in a lemon-and-stock liquid for 75 minutes on the lowest heat. Inverted onto a platter at the end.
Kabsa
Saudi Arabia's national dish, the one platter you'll meet at almost every gathering from family lunch through wedding banquet. You brown chicken pieces or lamb shoulder hard in a heavy pot, then build a base of onion, garlic and ginger softened in the same fat, with tomato and a spoonful of baharat (or a dedicated kabsa spice mix) blooming until the kitchen fills with cardamom and cinnamon. The protein simmers in tomato and stock until it's tender and pulling away from the bone, then long-grain rice goes in to cook absorption-style in the same liquid, drinking up every layer of flavour the broth carries. You finish with almonds toasted in butter, raisins plumped briefly, and a fresh salsa of tomato, onion, chilli and parsley spooned on the side to cut the richness. Eaten communally from the centre platter, with hands or a long spoon.
