
Mujadara
Levantine lentils and rice topped with deeply caramelised crisp onions. Vegan, frugal, profoundly satisfying. The crisp onions are non-negotiable; they're 70% of the flavour.
Overview
Brown lentils boil until almost tender; long-grain rice and water join them along with cumin and a touch of cinnamon. While they finish cooking, sliced onions fry slow in olive oil until they're deep brown and crisp. The crisp onions and their dark oil go on top.
Ingredients
- 200 g brown lentils (or green lentils, rinsed)
- 200 g long-grain rice (rinsed)
- 1 teaspoon ground cumin
- ½ teaspoon ground cinnamon
- 1 teaspoon salt
- ¼ teaspoon black pepper
Caramelised onions
- 3 onions (large, very thinly sliced)
- 6 tablespoons olive oil
- ½ teaspoon salt
To serve
- Greek yogurt (optional)
- Lemon wedges
- A small bunch of parsley (chopped)
Method
Stage 1 - Cook the lentils
- Cover the lentils with 1 litre of cold water in a heavy pan; bring to a simmer.
- Cook 20-25 minutes until almost tender (still has some bite).
- Drain, reserving the cooking liquid.
Stage 2 - Caramelised onions
- While the lentils cook, heat the olive oil in a wide heavy pan over medium heat.
- Add the sliced onions and salt.
- Cook, stirring often, for 25-30 minutes until deeply browned and the edges are crisp. Don't rush; the colour is the dish.
- Lift half the onions onto kitchen paper to crisp; reserve the rest with their oil for stirring through.
Stage 3 - Combine and finish
- Return the drained lentils to the pan; add the rice, cumin, cinnamon, salt and pepper.
- Pour in 500 ml of the reserved lentil cooking liquid (top up with water if you don't have enough).
- Stir in half the soft onions and 2 tablespoons of their oil.
- Bring to a simmer; cover and cook on very low heat for 15-18 minutes until the rice is tender and the liquid absorbed.
- Off the heat, leave covered for 10 minutes.
Stage 4 - Serve
- Fluff with a fork.
- Top with the crisp onions and a drizzle of the onion oil.
- Yogurt and lemon wedges on the side; scatter parsley.
Notes
- Onions are the flavour: Half-caramelised onions are flat-tasting. 25-30 minutes minimum, until they're really dark.
- Lentils almost-cooked first: Cook them past the rice and they go to mush; behind the rice and they stay chalky.
- Reserve the lentil water: It's full of flavour; cook the rice in it.
Storage
- Keeps 4 days refrigerated. Crisp onions soften but the dish still tastes great.
- Freezes 2 months.

Ash Reshteh
Dried beans (chickpeas + kidney beans + green lentils, OR the popular cheat of mixing all dried into one pot) soak overnight. Onion fries in oil; turmeric, salt and the soaked-and-drained beans go in with stock; simmers for 1 hour 15 minutes until tender. A heaping double handful of finely chopped fresh herbs (parsley, coriander, dill plus blanched spinach) goes in. Reshteh noodles (Persian flat egg noodles, sold at Iranian shops) add for the last 10 minutes. The bowl finishes with a sour-fermented kashk drizzle, dried-mint-and-garlic-in-oil sizzle, deep-fried golden onion, and a swirl of yogurt. Garnishes are not optional.
Chicken Shawarma
Boneless chicken thighs swim in a yogurt-spice marinade for at least 4 hours. They roast hard at high heat for char, then rest and slice thin. The standard accompaniments are toum (garlic sauce), pickled turnips, parsley and warm pita.
Dolma (Azerbaijani Stuffed Vine Leaves)
Azerbaijan's stuffed vine leaves, claimed as the national dish in 2017 and added to UNESCO's list of Intangible Cultural Heritage. You start by soaking brined vine leaves in warm water for twenty minutes to leach out the salt, then build a filling of raw lamb mince with rinsed short-grain rice, finely chopped onion, fresh mint and dill, butter, salt and pepper. Each leaf gets a teaspoon of filling and rolls into a tight cigar. The rolls pack in a single layer in a heavy pot, then a second and third layer perpendicular to the first, like a brickwork pattern that holds them together as they cook. Stock and a splash of sumac water pour in to barely cover, an inverted plate weighs everything down so the dolma keep their shape, and the lot simmers slowly for fifty minutes. Plated on a platter with thick garlic yogurt alongside for dipping.
Dolmadakia (Greek Stuffed Vine Leaves)
Brined vine leaves are soaked for 20 minutes to leach the brine. Filling: short-grain rice is par-cooked for 10 minutes with onion in olive oil; off heat, dill, mint, parsley, pine nuts, currants and lemon zest are stirred through. Each leaf is given a teaspoon of cool filling and rolled into a tight cigar. The rolls are packed tight in a heavy pot lined with broken / extra leaves. Olive oil, lemon juice and stock are poured in to barely cover. Weighed down with an inverted plate. Slow-simmered for 50-60 minutes. Cooled in the liquid; served at room temperature.
