
Tabbouleh
Lebanon's iconic salad: very finely chopped parsley with a little bulgur, tomato, mint and spring onion, dressed with lemon and olive oil. Mostly herb.
Overview
Bulgur soaks briefly in lemon juice, not water, so it tenderises while taking on flavour. Parsley is washed, dried thoroughly, and chopped to fine green confetti. Tomato dices small and drains. Mint and spring onion go in fine. Everything tosses with olive oil, lemon, salt, pepper. No need to rest; eat right away.
Ingredients
- 50 g fine bulgur
- 2 lemons (about 6 tablespoons, juice)
- 4 large bunches flat-leaf parsley (around 250 g; leaves only)
- 1 small bunch mint (leaves only; around 30 g)
- 4 spring onions (white and green; finely sliced)
- 4 ripe tomatoes (medium, deseeded; very finely diced)
- 6 tablespoons extra-virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon ground allspice (optional)
- ¼ teaspoon ground cinnamon (optional)
Method
Stage 1 - Soak the bulgur
- Place the bulgur in a small bowl; pour over half the lemon juice.
- Rest 20 minutes - the bulgur will plump and soften.
Stage 2 - Prepare the parsley
- Pick the leaves from the stems (a tedious but essential step).
- Wash thoroughly; dry very well in a salad spinner or between tea towels - wet parsley turns the salad mushy.
- Pile on a board and chop very finely with a sharp knife. Don't blitz in a food processor - the texture matters.
Stage 3 - Tomato
- Cut the tomatoes in half; squeeze out the seeds and watery cores.
- Dice the flesh into 5 mm cubes.
Stage 4 - Combine
- Tip the bulgur (with any unabsorbed lemon juice) into a wide bowl.
- Add the parsley, chopped mint, spring onions and tomato.
- Pour over the olive oil and the remaining lemon juice.
- Add the salt, pepper and spices if using.
- Toss gently with two forks (don't crush the parsley).
Stage 5 - Serve
- Taste; adjust lemon and salt. Should be sharp and herbal, with the bulgur in the background.
- Serve at room temperature, traditionally piled into Romaine lettuce leaves to scoop.
Notes
- Mostly parsley, not bulgur: Lebanese tabbouleh is a herb salad with grain. Many supermarket versions get this backward; the proper ratio is around 5:1 parsley to bulgur.
- Chop, don't process: A food processor turns parsley into wet pulp. Knife-chopping keeps the leaves discrete.
- Dry the parsley well: Wet parsley dilutes the dressing and the salad goes limp within an hour.
Storage
- Best within 2 hours of mixing; the parsley wilts and the tomato weeps.

Chana Chaat
Cooked chickpeas (tinned for speed, OR overnight-soaked and home-cooked for the best texture) toss with diced red onion, finely chopped tomato, small-diced boiled potato and chopped fresh coriander. The dressing: lemon juice, chaat masala (a salty-sour spice mix sold at Pakistani shops), roasted ground cumin, Kashmiri chilli powder and a pinch of salt. Hot chilli sauce and tamarind chutney drizzle on; the chaat tosses; crushed papri tops; eat immediately.
Choban Salata (Azerbaijani Shepherd's Salad)
The Azerbaijani version of the shepherd's salad that turns up in some form on every table from the Balkans to Persia, the bright herby counter to anything rich coming out of the kitchen. You dice tomatoes, cucumber and red onion to five-millimetre cubes (smaller than a typical chopped salad, almost a relish) and chop the herbs fine: dill, mint and tarragon, the tarragon being the move that distinguishes the Azeri version from its neighbours. Everything tosses together with olive oil, lemon juice and salt about fifteen minutes before serving, so the salt draws the tomato juice out and the salad relaxes into itself. Best the same day; the salad weeps if held overnight. Eat with grilled meat, with plov, with lavash, with whatever the main is.
Fattoush
Pita breads are torn into pieces and toasted (or fried) until crisp and crunchy. Chopped vegetables, mint, parsley and a sumac-lemon-olive-oil dressing are tossed together; the toasted pita goes in last so it stays crunchy. Eaten immediately before the bread goes soft.

A dressing of lemon juice, pomegranate molasses, sumac, garlic, olive oil and salt is whisked. The salad is tossed with the dressing just before serving; the pita is scattered on top so it stays crisp.
