
Grilled Eggplant Salad
A Uyghur eggplant salad: aubergines roasted soft and torn smoky, tossed with chopped tomato, cucumber, mild green pepper and a garlic-browned oil.
Overview
A juicy room-temperature salad built around the smoky soft flesh of whole-roasted eggplant. The eggplant flavour anchors everything, mildly bitter, deeply smoky if you can blister the skin first, almost meaty in texture once scooped. Around it, finely chopped tomato and cucumber release their water and form a brothy dressing on the bottom of the bowl, sweetened slightly by the addition of a pinch of sugar and sharpened by black rice vinegar (Chinkiang, the malty, dark, slightly sweet variety, not the white-rice kind). Browned garlic in olive oil folds in last and carries the aroma. Easy to make and forgiving; the only step that requires care is roasting the eggplants long enough that the flesh is properly soft. Sits alongside polo or naan as a fresh, juicy counter to the heavier mains of the Uyghur table, and the kind of dish made every day in summer when eggplants are cheap and good in the Kashgar bazaars.
Ingredients
- 2 whole eggplants (~440 g total)
- 4 tomatoes (~370 g, finely chopped)
- 2 cucumbers (~350 g, cut into thin strips)
- 1 mild green pepper (~40 g, finely chopped)
- 1 onion (~85 g, finely chopped)
- 1 spring onion (finely chopped)
- ½ bulb garlic (finely chopped)
- 5 g fresh basil (finely chopped)
- 100 ml black rice vinegar
- 2 tablespoons olive oil
- 2 g salt
- 2 g ground white pepper
- 1 g ground black pepper
- 2-3 g caster sugar
Method
Stage 1 - Roast the eggplants
- Preheat the oven to 250°C / 480°F (some ovens cap at 230°C; that's fine).
- Place the whole eggplants on a tray; roast 25 minutes until the skin is wrinkled and the flesh feels soft when pressed.
- Cool until handleable.
Stage 2 - Browned garlic oil
- Heat the olive oil in a small pan over medium-low heat.
- Add the minced garlic; cook 1-2 minutes until just lightly golden.
- Off heat; set aside (oil and garlic together).
Stage 3 - Combine
- Halve the cooled eggplants lengthways; scoop the soft flesh out with a spoon and chop finely.
- In a wide bowl, combine the eggplant, tomato, cucumber, green pepper, onion, spring onion and basil.
- Add the vinegar, salt, white pepper, black pepper and sugar.
- Pour the browned garlic and its oil over the top.
- Toss gently by hand. Taste; adjust salt and vinegar.
Stage 4 - Serve
- Transfer to a shallow serving dish.
- Serve at room temperature alongside polo, laghman, or fresh-baked naan.
Notes
- Brown the garlic, don't burn it: raw garlic is too sharp for this salad; toasted dark is bitter. Aim for just-golden, then pull off heat.
- Black rice vinegar (Chinkiang) specifically: white rice vinegar reads as sharper and thinner. Use the dark, malty black vinegar for the right depth.
- Roast longer for smoke: the source eggplants come out smokier from a hotter oven or charred over a gas flame first. Char the skin if you can.
Storage
- Best eaten within an hour of mixing; the vegetables release water on standing.
- Keep up to 1 day refrigerated; lift the eggplant out and re-toss before serving.

Uyghur Kebab Burger
A burger that tastes like a Kashgar street kebab rather than a Western quarter-pounder. Cumin is the dominant note (Uyghur cooking uses it the way the rest of China uses Sichuan pepper); behind it sits sweet chilli powder for warmth without burn, and the lamb fat that catches a deep gold sear on the outside. The patty stays loose and juicy because the mix is bound with a single egg and a spoon of flour rather than pressed dense like a beef burger. Smell-wise: charred fat, cumin, and the sweet onion folded into the meat. Easy enough that you can do it on a weeknight as long as the mix has had its 3-hour rest in the fridge; the resting time is what makes the difference between a flat-tasting patty and one that eats like the real tonur version. The dish is a clear modern adaptation of the classic Uyghur cumin lamb kebab, scaled down for households without access to a clay tandoor, and increasingly common in cafés across Xinjiang and the Uyghur diaspora.
Piri Piri Chicken
Piri-piri chicken is the dish that travelled from Mozambique to Portugal to the high street, and the original is still the best: a whole chicken spatchcocked flat, marinated overnight in a vivid red paste of bird's-eye chillies, garlic, paprika, lemon and olive oil, then grilled hard over charcoal until the skin is darkly blistered and the meat just-cooked through. The marinade itself takes five minutes in a blender. The bird wants a minimum of four hours in it, ideally overnight. A home broiler on max works if you do not have a barbecue, but the smoke from the coals is half the dish. Serve with a second bowl of the same marinade as a sauce, a green salad, and chips.
Adana Kebab
Lamb shoulder and lamb tail fat (or extra fatty trim) chop fine with a heavy knife or zırh (curved blade), proper Adana is hand-cut, never minced through a grinder. The texture has visible pieces of meat and fat the size of small peas. Knead with salt, ground sumac, hot red Aleppo / Maraş chilli flakes (acı biber) and crushed garlic for 6-8 minutes until tacky and clinging to the bowl. Chill for 2 hours. Press a fistful onto a wide flat skewer, working from the centre outward, shaping a 25 cm × 3 cm flat sausage with finger-tip dimples down the length. Grill over hot charcoal 5-6 minutes per side. Slide off skewer onto warm lavash. Rest for 2 minutes; serve.
Chapli Kebab
Chapli kebabs are the spiced beef patties sizzling on a wide flat tawa at any roadside grill from Peshawar to Kabul, big enough to wrap a hand around and seasoned with the unusual punch of dried pomegranate seeds and coriander. The mince mixes with grated onion, chopped fresh tomato, ginger, garlic, beaten egg and a little gram flour to bind, plus the signature Afghan spice blend (coriander seed, pomegranate seeds, chilli flakes, cumin and garam masala). A thirty-minute rest lets the gram flour absorb the moisture and the spices marry. Pat thin and wide (the word chapli means "flat" or "slipper-shaped"), then fry hard in oil three or four minutes a side until darkly crusted. Eat hot from the pan, wrapped in fresh naan with sliced raw onion and a green chutney.
