Ingredients
Primary Ingredients
- 150 milliliters kecap manis (Indonesian sweet soy sauce, dark, thick, with molasses character)
- 2-3 fresh red chillies (medium heat)
- 4-5 garlic cloves
- 3-4 tablespoons fresh lime juice (or lemon juice)
- 1-2 tablespoons water (to adjust consistency)
Optional Ingredients
- 1 teaspoon tamarind water (for tartness)
- 1 teaspoon fish sauce (for umami depth)
- ½ teaspoon ground ginger (for warmth)
Method
Stage 1 - Prepare Chillies & Garlic
- Wash fresh red chillies.
- Cut off the stem end.
- For less heat, slice the chilli in half and remove seeds and white membrane, then finely chop.
- For maximum heat, leave seeds intact and finely chop the entire chilli.
- Peel and crush 4-5 garlic cloves in a mortar with a heavy pestle until they form a fine paste.
Stage 2 - Combine Base Ingredients
- Pour the kecap manis into a small bowl.
- Add the finely chopped chillies to the kecap manis.
- Add the crushed garlic paste.
- Stir very thoroughly with a spoon, breaking up garlic clumps, until well combined, approximately 1-2 minutes.
Stage 3 - Add Acid & Adjust Consistency
- Add 3 tablespoons fresh lime juice (or lemon juice).
- Stir well to combine.
- Add 1 tablespoon water.
- Stir again.
- Taste and adjust:
- Add more lime juice if you want brightness and tartness
- Add more water if the sambal seems too thick
- Add more chilli if you want extra heat
Stage 4 - Optional Additions
- If adding tamarind water, add 1 teaspoon and stir well, this adds complexity
- If adding fish sauce, add a few drops and stir, this adds umami depth
- If adding ginger, add ½ teaspoon and stir until evenly distributed
Stage 5 - Rest & Develop Flavor
- Transfer to a serving bowl or glass jar.
- Cover loosely with plastic wrap or cloth.
- Allow to sit at room temperature for 20-30 minutes.
- This resting period allows flavors to meld and develop, do not skip this step.
Stage 6 - Final Taste & Serve
- Before serving, taste again.
- Adjust lime juice, salt (can add pinch of sea salt if needed), or water as desired.
- Stir well, the sambal will separate slightly with visible chilli particles floating in sauce.
Notes
- Kecap Manis Character: This thick, sweet soy sauce is essential, cannot be substituted with regular soy sauce. Indonesian brands like ABC or Bango are widely available in Asian grocers.
- Chilli Heat vs. Sweetness: The sweetness of kecap manis requires actual heat from chillies to balance it. Never underestimate number of chillies needed.
- Garlic Flavor: Fresh, pungent garlic is crucial. Use fresh garlic cloves, never garlic powder.
- Acid Balance: Lime juice brightens and cuts through sweetness. Adjust to your preference for tartness.
- Resting Period: This sambal develops depth of flavor as ingredients sit together, the 20-30 minute rest is not optional.
- Texture: The sambal should be slightly chunky with visible chilli and garlic particles, not completely smooth.
- Fish Sauce: This Indonesian addition is optional but traditional; use sparingly, it's pungent.
Variations
Extra Spicy: Add 1-2 additional chillies; keep seeds and membranes for maximum heat. Sweeter Version: Reduce lime juice to 2 tablespoons for more kecap manis character. With Tamarind: Replace lime juice with 4 tablespoons tamarind water for fruitier, more complex tartness. With Ginger: Add ¾ teaspoon ground ginger for warming spice. Thicker Consistency: Reduce water to ½ tablespoon or skip water entirely for thicker dipping sauce.

Beef Si Byan
A Burmese curry from the country's Indian-origin community, sitting somewhere between a Madras and a Burmese ohn-no in spice profile. You marinate chunks of beef chuck or shin in turmeric, fish sauce and salt while you fry onions in oil until they're deep brown - that long onion fry is the foundation. The beef browns in the same oil, then ginger-garlic paste, paprika and chilli powder go in, then tomato and water turn it into a stew. Two hours of slow simmer until the meat falls apart at a fork. The signature finish is the see byan, a deep red-orange oil slick that rises to the top of the curry as it reduces, which is what the dish is named for. Eaten with rice or paratha, and a small bowl of pickled vegetable on the side.
Chruok
A Cambodian quick-pickle, the bright sharp counter that turns up on every Khmer table next to grilled meats and rich curries. You julienne daikon, carrot and cucumber thin so the brine penetrates fast, then salt them briefly in a colander to draw the water out. The brine is sweet-sour: lime juice, white vinegar, palm sugar, fish sauce (or soy for a vegetarian version) and a sliced bird's-eye chilli. Pour it over the drained vegetables and leave to sit at room temperature for an hour, then refrigerate. Ready in an hour, better after three, best the next day. Eaten alongside grilled fish or chicken, piled into a bowl of rice with anything saucy, or tucked into a sandwich.
Firecracker Prawns
Prawns (shrimp) curl naturally into half-circles. To get your firecracker prawns looking right you need to do some cosmetic work but it’s an easy job: the underside of the prawns needs to be scored in three places so that you can straighten them up. I have seen this popular starter prepared with many different marinades but as the name implies, it’s the chilli that is important. In this recipe I suggest using both chilli paste and roasted chilli flakes. How much of each you add, however, is completely down to you and how spicy you like your food. I recommend serving these with sweet chilli sauce.
Kung Pao Shrimp
Kung pao (gongbao) shrimp is the seafood cousin of the classic Sichuan gongbao jiding, named for the 19th-century governor-general Ding Baozhen whose title was Gong Bao. Where the chicken version uses diced meat, the shrimp version keeps the prawns whole or halved so they curl into bright pink commas around the chillies and peanuts. The flavour profile is the signature Sichuan "lychee" balance: a touch of sweetness from sugar, sourness from black vinegar, salt and umami from soy, and the warm tingle (ma la) of toasted Sichuan peppercorn paired with the smoky bite of dried er jing tiao chillies. This is a fast dish, fundamentally a wok exercise: every ingredient must be prepped and lined up before the heat goes on, because once the chillies hit the oil you have maybe ninety seconds before everything is overcooked. Difficulty is moderate for a home cook with a working wok and high burner; the trick is keeping the chillies dark red and fragrant without scorching them black, and pulling the shrimp out the moment they curl. Served over plain rice it is one of the most rewarding ten-minute meals in the repertoire.
