Method
Stage 1 - Prepare Chillies
- Wash fresh red chillies thoroughly.
- Cut off and discard the stem end from each chilli.
- If you prefer less heat, slice chillies in half and remove the seeds and white membrane inside.
- For maximum heat, keep all seeds and membrane intact and simply finely chop the chillies.
Stage 2 - Blanch Chillies (Traditional Method)
- Bring a large pot of water to a rolling boil.
- Add the prepared chillies.
- Boil for 5-8 minutes until the chillies turn darker red and begin to soften.
- Drain the chillies thoroughly in a colander, pressing gently to remove excess water.
- This step makes pounding easier and reduces extreme rawness while maintaining vibrant color.
Stage 3 - Pound to Paste (Traditional Method)
- Transfer the blanched chillies (in batches if necessary) to a large mortar.
- Using a pestle, pound forcefully and with purpose.
- The chillies will gradually break down into a coarse paste.
- Continue pounding for 5-10 minutes until you reach desired coarseness (not completely smooth, but rough paste).
- This manual effort is authentic and creates the proper texture.
Stage 4 - Alternative Method (Food Processor)
- If using a food processor instead of mortar and pestle, add drained blanched chillies.
- Pulse repeatedly (don't blend continuously) until the chillies break down to paste consistency.
- Pulse rather than running continuously to maintain coarse texture rather than smooth purée.
Stage 5 - Add Salt & Combine
- Add the salt to the pounded chillies.
- Mix very thoroughly to distribute salt evenly throughout.
- Taste and adjust salt to preference.
Stage 6 - Optional Additions
- If adding tamarind water, stir in 1 teaspoon at a time, it adds tartness but can easily overpower.
- If adding ground roasted peanuts, fold in gently, this is called sambal oelek kacang and is a popular variation.
Stage 7 - Cool & Store
- Transfer to a clean glass jar.
- Allow to cool completely to room temperature.
- Cover tightly and refrigerate.
Notes
- Chilli Variety: The heat and flavor depend entirely on your chillies. Use the freshest, most aromatic red chillies available.
- Blanching: This traditional step reduces raw heat slightly while preserving bright red color. Skip if you want maximum rawness and fiery burn.
- Pounding vs. Processing: Mortar and pestle creates the most authentic texture and flavor development. Food processor is faster but produces slightly different texture.
- Coarse Texture Important: This should never be a smooth purée; it's a rough paste where you can see chilli pieces.
- Salt Level: Adjust to your preference and saltiness of your specific chillies.
- Freshness Factor: This is best made and used within a few days while chillies are vibrant.
Variations
Extra Hot: Remove all seeds and membranes from some chillies; leave others whole for heat variation. With Lime: Add 1-2 tablespoons fresh lime juice for brightness. With Garlic: Add 2-3 pounded garlic cloves for umami depth (changes name to sambal ulek bawang). With Peanuts: Add 3 tablespoons ground roasted peanuts as noted above (sambal oelek kacang). Tamarind Water: Add 1 teaspoon for tartness (optional).

A simple syrup of rice vinegar, palm sugar, water and salt is brought to a gentle simmer to dissolve the sugar, then cooled. Cucumber, shallot and chilli are sliced thin and combined in a small bowl. The cooled syrup is poured over. Rested for 10-15 minutes for the vegetables to wilt slightly into the dressing. Served in small individual ramekins as a dip, OR in a larger bowl as a side, with peanuts sprinkled on top.
Coconut Chutney
Fresh coconut is ground with green chilli, ginger, roasted gram and a small splash of water into a smooth paste. The chutney is finished with a tempering of mustard seeds, dried red chilli, curry leaves and asafoetida in hot oil, poured over the white chutney for a striking visual and aromatic contrast.
Jhal Muri
Jhal muri (literally "spicy puffed rice") is the most democratic snack in Bengal: assembled in seconds from a tin trunk by a muriwala, tipped into a rolled-newspaper cone, and eaten standing on a pavement for the price of a few rupees. The base is muri (puffed rice), and everything else is built around the principle of contrast. Raw mustard oil is the soul of the dish, sharp and nasal and slightly bitter; without it you have a salad, not jhal muri. The vegetables stay raw and crunchy, onion, green chilli, cucumber, tomato, chopped into tiny dice so each spoonful gets one of each. Peanuts and chana chur (or sev) add fat and crunch; black salt and chaat masala add the funky-tangy depth that makes Indian street snacks addictive. The lime goes in last so the puffs don't soften. This is a dish where technique matters less than ingredient quality: muri must be crisp (refresh in a dry pan if it's gone soft), mustard oil must be the proper pungent kind, and the lime must be fresh. It is everywhere in Bengal, tea-time at home, train platforms, the Maidan on a winter afternoon, and there is no recipe in any cookbook that quite captures the feel of it being mixed in front of you in a paper cone.
Lemon Rice
A temper of mustard seeds, chana dal, urad dal, peanuts, dried red chilli and curry leaves is bloomed in sesame oil. Turmeric is stirred in for colour. Cooked, cooled rice is tossed through off the heat, then lemon juice is added at the end so the heat doesn't dull the acidity. Bright lunchbox classic; the dish should taste fresh and tart, not muddled.
