A vindaloo spice mix: dried red chillies, vinegar-friendly spices (mustard, cumin, coriander, black pepper) and a heavy hand of chilli.
Overview
A hot, sharp spice mix designed to complement vinegar-based curries. High in chilli with warm supporting spices.
Ingredients
- 2 tsp chilli powder
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp black pepper
- ¼ tsp cloves
- ¼ tsp cinnamon
Method
- Mix all spices together.
- Store airtight.
Notes
- Designed for heat and acidity; typically combined with vinegar and garlic.
- Increase chilli powder for additional heat.
Serving
Use 2-3 tsp in marinades or curries.

Lemon Rice
A temper of mustard seeds, chana dal, urad dal, peanuts, dried red chilli and curry leaves is bloomed in sesame oil. Turmeric is stirred in for colour. Cooked, cooled rice is tossed through off the heat, then lemon juice is added at the end so the heat doesn't dull the acidity. Bright lunchbox classic; the dish should taste fresh and tart, not muddled.
