Overview

Ground beef browns in a wide oven-safe skillet with onion and garlic. Spices (chilli powder, cumin, oregano, smoked paprika) bloom in the fat. Tomato passata, kidney beans, a splash of stock, salt and pepper simmer for 20 minutes to thicken. Surface scatters with a thick layer of grated cheese (cheddar + Monterey Jack). Goes under a hot grill for 4-5 minutes till bubbling and crisped at the edges. Tops with sliced spring onion, jalapeños, soured cream. Eats hot with tortilla chips.

Ingredients

Beef base

  • 2 tablespoons neutral oil
  • 1 onion (large, finely diced)
  • 4 garlic cloves (minced)
  • 500 g lean ground beef (15% fat)
  • 2 tablespoons chilli powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tin (400 g) chopped tomatoes
  • 1 tin (400 g) kidney beans (drained and rinsed)
  • 100 ml beef stock
  • 2 tablespoons tomato purée

Topping

  • 200 g mature cheddar cheese (grated)
  • 100 g Monterey Jack cheese (or mozzarella; grated)
  • 2 spring onions (sliced thin)
  • 1 fresh jalapeño (sliced into rings)
  • 100 g soured cream
  • A handful of fresh coriander (chopped)

To serve

  • A large bowl of tortilla chips (salted)

Method

Stage 1 - Brown beef

  1. Heat the oil in a wide oven-safe skillet (a 28 cm cast-iron is ideal) over medium-high heat.
  2. Add the onion; cook 5 minutes till translucent.
  3. Add the garlic; 30 seconds.
  4. Add the ground beef; break up with a spoon; brown 6-8 minutes.

Stage 2 - Spice

  1. Stir in the chilli powder, cumin, oregano, smoked paprika, salt and pepper.
  2. Cook 1 minute till fragrant.

Stage 3 - Simmer

  1. Pour in the chopped tomatoes, kidney beans, beef stock and tomato purée.
  2. Stir; bring to a simmer.
  3. Reduce heat to medium-low; cook 18-20 minutes till thickened.

Stage 4 - Cheese cap

  1. Heat the grill / broiler to high.
  2. Smooth the surface of the chilli; scatter the grated cheddar and Monterey Jack evenly across.

Stage 5 - Broil

  1. Slide the skillet under the grill 4-5 minutes; the cheese should melt, bubble and turn gold-spotted.

Stage 6 - Top and serve

  1. Scatter the sliced spring onion, jalapeño rings and chopped coriander.
  2. Dollop soured cream in the centre (or serve on the side).
  3. Bring the skillet straight to the table on a heatproof board.
  4. Serve with the big bowl of tortilla chips.

Notes

  • Lean-ish beef (15% fat): too lean = dry; too fatty = greasy puddle on top. 15% is the right balance.
  • Bloom the spices in the fat: dry-toasting briefly with the beef releases the volatile compounds. Skip and the dip tastes flat.
  • Two cheeses, not one: cheddar for flavour, Monterey Jack for melt. All-cheddar gives an oily separation; all-Jack tastes bland.
  • Cast-iron is the move: the residual heat keeps the dip molten at the table for 20+ minutes after broiling.

Storage

  • Reheats well in a 180°C oven covered 15 minutes; add fresh cheese on top before reheating to refresh the cap.
  • Keeps 4 days refrigerated.
  • The base (without cheese topping) freezes 2 months; thaw, reheat, then cheese and broil to order.

Fire-roasted tomatoes are the technical detail that lifts this above a generic chili, charring the tomatoes before canning adds a roasted note that ordinary diced tomatoes can't supply. Texture is chunky and brothy rather than thick-and-pasty (this isn't a chili-mac chili), with kidney beans giving substance and pieces of bell pepper still holding their bite. Smell is cumin and smoked paprika on browned beef. Genuinely easy and incredibly forgiving, chili is one of the few dishes that's better the day after it's made, so it tolerates a longer simmer if you have it. Aushak are the Afghan leek-and-mint dumplings that share their plating shape with mantu: a smear of garlic yogurt under, dumplings boiled and fanned over, a thick lamb meat sauce ladled across the top, dried mint and chilli to finish. The filling is just leeks (or scallions), salted briefly to draw the water out, squeezed dry, then mixed with fresh mint, ground coriander and pepper. Wonton wrappers (or homemade dough) seal around a teaspoon of filling pinched into half-moons or triangles. While the dumplings boil, you make the topping: ground beef or lamb fried with onion, garlic, tomato paste and dried mint, simmered into a thick savoury sauce. The yogurt sauce is just chaka with garlic. Plate together while everything is still warm.

Birria

Birria is a Mexican braise of long, patient ambition. Originally a goat or lamb dish from Jalisco, it has long since adopted beef in much of Mexico and almost entirely in the popular taco version. The flavour comes from a layered chile base: guajillo for fruit and colour, ancho for raisin sweetness, pasilla for earthy depth, and a handful of arbol for a sharper heat. These are simmered with onion, garlic, cinnamon and peppercorns, blended smooth with chipotles in adobo and fire-roasted tomato, then poured over seared chuck and short rib for a long oven braise. Three hours later the meat is meltingly tender, sitting in a rust-red consomme that is the whole point: ladled over the shredded beef in a bowl, scattered with raw onion, cilantro and lime, or used to dip crisp taco shells for the now-iconic quesabirria. The recipe takes time but very little technique; almost everything happens unattended in the oven. Plan ahead and make it a day in advance so the flavours settle and the fat lifts cleanly off the top before you reheat.
