Method
Stage 1 - Heat the oven and prep
- Preheat oven to 220°C / 425°F.
- Wash and dry the sweet potatoes; pierce each several times with a fork.
- Drizzle with olive oil; rub to coat.
- Wrap each individually in foil.
Stage 2 - Roast
- Place the sweet potatoes on the oven rack; roast 1 hour.
- Season the chicken with salt and pepper; place on a baking tray.
- After the sweet potatoes have been in 30 minutes, add the chicken tray to the oven.
- Cook the chicken 30 minutes until 75°C / 165°F internal.
- Remove both from the oven.
Stage 3 - Buffalo chicken
- Shred the chicken with two forks.
- Toss with the buffalo sauce.
Stage 4 - Assemble
- Cool the sweet potatoes 10-15 minutes (they continue cooking).
- Cut a slit lengthways down each; press the ends to open up.
- Pile the buffalo chicken in.
- Crumble blue cheese over each.
- Garnish with spring onions.
- Serve immediately.

- Frank's RedHot is the buffalo: plain Frank's, not the "wing sauce" variant (which is creamier). Hot sauce + a little melted butter is the classic blend.
- Rotisserie chicken hack: skip the chicken roast and use ~280 g of pulled rotisserie chicken instead. Cut prep time in half.
