Method

Stage 1 - Rehydrate Porcini

  1. Pour 100 ml warm water over the dried porcini mushrooms.
  2. Allow them to soak for 15 minutes to rehydrate and soften.
  3. Drain carefully, reserving the soaking liquid (about 60 ml; it's flavorful).
  4. Chop the rehydrated porcini into small pieces.

Stage 2 - Brown Sausage

  1. Remove the skins from the sausages and place the meat in a bowl, breaking it into chunks.
  2. Heat the olive oil in a large frying pan over low heat.
  3. Add the sausage meat and the finely chopped leek.
  4. Fry for 5 minutes, stirring occasionally with a wooden spatula to crumble the meat and cook evenly.
  5. The sausage should brown and render its fat; the leek should soften and meld into the meat.

Stage 3 - Add Rosemary & Porcini

  1. Add the fresh rosemary and chopped porcini mushrooms to the pan.
