- 8 tablespoons olive oil

- 1 teaspoon fresh thyme leaves
- 1 tablespoon fresh rosemary leaves (finely chopped)
- 2 tablespoons fresh flat-leaf parsley (finely chopped)
- Salt to taste
Pasta
- 500 grams spaghetti
Method
Stage 1 - Cook Peppers
- Heat oil in a large frying pan over low heat.
- Add garlic and peppers and gently fry for 2 minutes.
Stage 2 - Add Herbs & Simmer
- Add chilli flakes with all the fresh herbs.
- Continue cooking for a further 6 minutes, stirring occasionally with a wooden spoon.
- The peppers should be soft and sweet, not broken down.
- Season with salt and set aside, away from the heat.
Stage 3 - Cook Pasta
- Meanwhile, cook pasta in a large saucepan of boiling salted water until al dente.
- Drain thoroughly and return to the same pan.
Stage 4 - Combine & Serve
- Pour pepper mixture into the pasta pan.
- Stir everything together over low heat for 30 seconds.
- The sauce should coat the pasta evenly.
- Divide among warmed bowls.
- Serve immediately.
