Ukrainian potato pancakes: grated potato squeezed bone-dry, mixed with onion, egg and a small amount of flour, and pan-fried until lacy-edged and deeply golden. The mainstay of Ukrainian and Belarusian breakfasts and weekday dinners. Soured cream on the side.
Overview
Floury potatoes grate into cold water with a squeeze of lemon (stops browning); a wrung-dry pile of grated potato mixes with finely-grated onion, eggs, salt and a small amount of flour. Spoonfuls fry in butter or oil until each side is crisp and golden, the inside should still be tender. Eat immediately with soured cream and dill.
Ingredients
- 1 kg floury potatoes (Maris Piper, King Edward; peeled)
- ½ lemon (for the soaking water, juice)
- 1 onion (medium, finely grated)
- 2 eggs (large, lightly beaten)
- 3 tablespoons plain flour
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- 4-6 tablespoons sunflower oil (for frying)
To serve
- 200 g soured cream
- A small bunch of fresh dill (chopped)
- Crispy fried onions (optional)
Method
Stage 1 - Grate
- Set up a bowl of cold water with the lemon juice.
- Coarsely grate the potatoes into the lemon-water as you work.
- Once all are grated, drain through a sieve.
- Pile the grated potato into a clean tea towel; gather the corners; twist hard over the sink to wring out as much liquid as possible.
Stage 2 - Mix
- Tip the wrung potato into a wide bowl.
- Squeeze the grated onion through your fingers (or in a tea towel) to drain excess liquid; add to the potato.
- Mix in the eggs, flour, salt and pepper.
Stage 3 - Fry
- Heat 3 tablespoons of oil in a wide heavy pan over medium-high heat.
- Drop heaped tablespoons of mixture into the pan; flatten gently to 1 cm thick.
- Fry 3-4 minutes per side until each side is deep golden and crisp; the inside should be cooked through.
- Lift onto kitchen paper; salt lightly while hot.
- Cook in batches, adding more oil as needed.
Stage 4 - Serve
- Pile onto a platter; serve hot with cold soured cream and a generous shower of dill.
Notes
- Wring the potato bone-dry: Wet mixture gives soggy pancakes that won't crisp. The drier you can get this, the better.
- Floury potatoes: Waxy potatoes don't release enough starch to bind. Use Maris Piper, King Edward, or russet.
- Don't make them too thick: 1 cm cooks through; 2 cm gives raw centres. Spread thin in the pan.
Storage
- Best fresh; reheat at 200°C for 5 minutes to restore crisp.
- Freezes 1 month cooked; reheat from frozen at 200°C for 12 minutes.

Bacalhau à Brás
Bacalhau à Brás is the dish Portugal turns to when the salt cod, the onions and the eggs all need to find their place in one pan: scrambled together with a tangle of fine matchstick chips so the whole thing reads as somewhere between a hash and a loose carbonara. The salt cod needs the usual day or two of cold soaks to draw the salt down, then a brief simmer to soften it; the onions take their time in olive oil with a few smashed garlic cloves until almost jam-like; the matchstick chips (palha) are fried separately so they stay crisp. Everything comes together in a wide pan, the eggs are whisked in over a low heat, and you stop the moment the eggs coat the cod and potato like a sauce. Never let them set firm. Olives, parsley and a wedge of lemon at the table.
Tafelspitz
The Habsburg Sunday lunch, said to have been Emperor Franz Joseph's favourite dish, and still the proper-occasion centrepiece of any Viennese family table. You poach a whole 1.5 kg piece of beef rump cap very gently for two and a half to three hours in a stock built around onions, root vegetables and marrow bones, until the meat is fork-tender but still sliceable. The technique is the opposite of a roast: no browning, no sear, all the flavour pulled out gently into the broth and held in the slow-cooking beef. Two courses come from the one pot. The clarified broth comes to the table first, scattered with chives and served with semolina dumplings or the fine pancake strips called Frittaten. Then the beef itself is sliced and presented with apple-horseradish sauce, a sharp green chive sauce, crisp pan-roasted Bratkartoffeln and creamed spinach. A glass of cool grüner veltliner alongside; Sunday afternoon in front of you.
Bolinhos de Bacalhau
Salt cod soaks for 24 hours with several water changes to draw out the salt. Once desalted, it's poached, flaked and folded into hot mashed potato with onion, parsley, egg and a pinch of pepper. The mix is shaped between two tablespoons into the classic oval (two-spoon quenelle shape) and deep-fried.
Pasteis de Bacalhau
These are the little salt-cod fritters you'd order at a marble counter in Lisbon, sitting with a glass of vinho verde while the bartender slides a plate across with no ceremony. The recipe itself is simple, dry mashed potato through flaked bacalhau with onion, garlic, parsley and egg, then a brief fry, but it does start the day before because the salt cod wants 24 to 36 hours of cold water soaks to draw the salt out. That step is the one thing you cannot shortcut. Once the cod is desalted, everything else is an afternoon's work: simmer the cod, flake it through warm potato, shape into the three-sided football "quenelles" that are the Portuguese signature, and fry until amber. Eat them warm with a wedge of lemon and a dish of piri-piri on the side.
